Our insider tip - The Pluma (feather or neck cut), whose triangular cut is reminiscent of a feather, has a great marbling and a particularly intense flavor. It is the most popular cut among many Spanish meat lovers.

Our pork comes exclusively from the Iberian acorn-fed pig, the "Cerdo Ibérico" of the diet and husbandry form "de bellota". In order to reach this highest quality level, the breeders and fatteners must meet the strictest requirements. Acorn-fed pigs are either purebred Ibéricos (100% ibérico or ibérico puro) or crosses with animals of the Duroc breed (ibéricos). The pigs live year-round in free range in the cork and holm oak groves of the Dehesa in southwestern Spain. In the period of the "montanera", the actual acorn fattening beginning in October or November of each year, the natural food supply of the animals consists mainly of ripe acorns in addition to grasses and herbs.
