Although everyone orders something different, they are all served the same thing - a (hopefully) juicy rump steak. This classic cut from the back of the beef could appear on menus under a variety of names: New York Strip, Kansas City Strip, Hotel, Ambassador, Nevada and Country Loin Steak, Strip Loin or Top Loin. But names are smoke and mirrors, at least as long as the meat tastes as wonderfully hearty as our steak made from the roast beef of Australian Black Angus cattle from Jack's Creek Farm.
