The text on the operating bar is printed directly on the stainless steel. With proper care, it will remain dark and legible. Only use warm soapy water to carefully wipe away dirt and stains. Do not use abrasive cleaners on stainless steel surfaces, especially not on the printed area of the control bar. If you clean this area with an abrasive cleaner, the print will come off.
Stainless steel grill grates are hard-wearing and corrosion-resistant. They need to be baked on and maintained less frequently than cast iron grill grates. It is best to clean stainless steel grill grates after each use. Clean the grates after grilling while the grill is still hot. This allows you to make the most of the time your food is resting. Use a grill brush with stainless steel bristles or our bristle-free Super WAVE grill brush to remove residue from your grill grates. If you forgot to clean the grill while your food was resting, preheat your grill to at least 260 °C on the "high" setting for 10 to 15 minutes. Clean any residue from your last use with the brush when the grill is really hot.
Charcoal is the traditional way of infrared grilling. The glowing briquettes emit infrared energy to the food, whereby the drying effect is only very slight. When lit, charcoal produces a high level of infrared radiation. This radiation is converted into heat when it hits the food. The further away the source of the infrared light is, the colder it is. And the closer your food is to the charcoal, the hotter it gets. When searing and grilling at high temperatures, you want the grates close to the charcoal and the food directly above the lit charcoal. If you want to grill more slowly, you can place the charcoal on one side of the grill and place the food away from the charcoal and use the indirect grilling method.
The indirect grilling method is perfect for grilling, roasting, baking or smoking and is a good way to exploit the full potential of your Napoleon barbecue. With this grilling method, the food is not placed over the charcoal and therefore not directly over the flame. With indirect heat, the food is cooked like in an oven and hardly needs to be turned. You can place the food directly on the grill or in a grill pan.
